We often preserve fruits in jams and jellies, but what about vegetables? Maybe your garden is producing beans faster than you can eat them, or maybe you wish you could eat the colorful vegetables filling the farmers’ market year-round. Although cucumbers usually come to mind when we think of pickles, there is a fantastic range of vegetables that can be pickled. Diverse traditions give us sweet, spicy, salty, sour, and tangy pickles. Join us to explore the history and science of pickling and learn how to make your own.
